It is called red slaw because we add red cabbage to the traditional Irish coleslaw ingredients of white cabbage and carrot. The "American" comes from the dressing we use on the slaw. This is a recipe from a restaurant in Murphysboro which is a small town half way between St Louis and Austin Texas. It might be a small town but it has one of if not the best Barbecue Kings in America.
